Tonight I decided I would try to record making our dinner. It was fun and very much a learning experience. Typically on Monday we have salmon, salad and a vegetable. Tonight’s vegetable was Oven Fried Potatoes.
For the Oven Fried Potatoes I used the following:
- 2 red skin potatoes per person
- Spray Olive Oil
- Black Pepper
- White Pepper
- Tin Foil
Preheat oven to 425. Cook for 20 minutes turn, cook for 10 more turn and take the foil off for the last 10 minutes. Total cooking time 40 minutes. Can also cook on 350 for 30 minutes then turn then 15 more then turn then 15 without the foil. Total cooking time 1 hour.
NOTE: If you are cooking for a vegan substitute more olive oil for the butter.
For the Simple Grilled Salmon I used the following:
- 4-5 oz of Salmon per person
- Lime Juice
- Potlatch Seasoning for Salmon & Seafood Spice Rub (bought at Williams and Sonoma)
Preheat Grill – Cook for 10-20 minutes depending on how warm your grill is and how done you like your Salmon.
NOTE: When we don’t have the rub we use spices around the house. Lime, lemon or orange juice will help to lessen the fishy taste.
Fun side note: If you listen closely you can hear Rufus talking to me. He must have thought I was talking to him when I was recording the video because he started meowing and I couldn’t get him to stop when I was recording 🙂
