As mentioned in my last post, yesterday we celebrated Veggie Hubby’s birthday. We had a full day that started off with Blueberry Pancakes. They tasted much better then they looked. I actually used Rice milk instead of cow’s milk because that is what I had. I had not planned on making blueberry pancakes but Veggie Hubby ask for them, so I thought why not.
Last weekend when I asked him what he wanted for his birthday, he said Lemon Meringue Pie. So after breakfast I then made him a Lemon Meringue Pie. He likes pie more than cake so most years I make him the pie of his choice. Veggie Hubby says it is a 10! Feeling pretty good about that since I haven’t made one in a while. I did use a pre-made pie crust from Whole Foods by Immaculate.
We went to lunch to an Asian restaurant with a friend. (I’ll blog about the restaurant OOKA in an future blog post.). She was sweet enough to make him a gluten free sugar free marble chocolate cake with the help of her cousin. The cake was yummy! Veggie Husband and she tease each other and she tells him that I’m her friend and he is her enemy, thus the AKA Enemy on the cake 🙂 Also the wait staff sung “Happy Birthday” and brought him ice cream – 3 flavors (mango, red bean and green tea). Mango was Veggie Hubby’s Favorite.
After lunch we headed to downtown Denver for a play. We had a small dinner at a restaurant Diego’s on 16th Street (I’ll blog about it later as well). We shared fajitas. Then we went to see Millionaire Quartet at Buell Theater. Great Music and interesting story.
We did start off the celebration on Friday night by going to Red Robin for Veggie Hubby’s free Birthday Burger. He chose the Garden Burger over the Boca Burger.
