Zucchini Noodles

One of the new kitchen tools we bought a few months ago was a Vegetable Spiral Slicer from Amazon.  We have mostly used it with Zucchini to make Zucchini noodles.  These are a great alternative to traditional spaghetti noodles.  I have tried several recipes with these noodles and the easiest is to make the noodles, put them in a glass dish and cover with your favorite spaghetti sauce. Set the oven at 400 degrees and cook for 10-15 minutes.

I  have been adding a breaded chicken patty for me (which I thought was gluten free but it turns out the nuggets in this brand are gluten free but the chicken patties are not).  For Veggie Hubby we usually use a veggie burger. He has several favorites so it depends on what we have in the freezer.  This makes for a very quick, yummy and healthy meal!

  1. I like sauteing a little onion and garlic with added tomatoes tossed over steamed zucchini slices. You could easily use these zucchini noodles in the same dish. Yum! And the noodles look so festive, I’m going to have to get myself a spiral slicer!
