Finished Ginger Shortbread Cookies

Over the holidays we tried out this recipe for Ginger Shortbread Cookies.  This was one of our favorites.  As you see from the picture to the left I did not dip the cookies and put sprinkles on them like the original recipe.  Veggie Hubby doesn’t like sprinkles so I decided to make them to look more like thumbprint cookies.

This recipe is very easy and quick to make.  Only about 10-15 minutes to mix and another 1o minutes to cook.  I didn’t use a cookie cutter, I just shaped with my hands. Once they have cooled you can put the melted chocolate on top.  I used the Chocolove Chocolate chips that are pictured below and melted about 3/4 cup to put on top of the cookies.  Veggie Hubby ate one of the cookies before I could get the chocolate on top of them, thus why the picture only has 11 instead of the 12 the recipe makes.
