Gluten Free Chocolate Sugar Cookies

If you like Sugar Cookies and you like Chocolate, you will love these. I made these cookies over the holidays ant they turned out yummy. You can find the recipe here. These cookies were one of the favorites this year. They also traveled very well. Veggie hubby liked these. In fact there weren’t any cookies that Veggie Hubby didn’t like.

Gluten Free Chocolate Sugar Cookies

Ingredients

  • 1/2 cup vegetable shortening – Melted and cooled
  • 1 1/2 cup gluten free all-purpose flour
  • 1/2 cup dutch processed cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp kosher salt
  • 1 1/2 cup sugar
  • 1 stick butter – room temperature
  • 1 large egg
  • 1 1/2 tsp vanilla

Directions

  1. Preheat oven to 375F
  2. Melt the shortening and set aside to cool
  3. Combine flour, cocoa powder, baking powder and salt in medium bowl
  4. In mixing bowl, beat butter and sugar for 3 minutes on med-high speed
  5. Add in shortening, egg and vanilla, mixing after each.
  6. On low speed, slowly add flour mixture
  7. Place dough still in mixing bowl in refrigerator for 15 minutes
  8. Drop tablespoon size cookies on parchment lined baking sheets 2 inches apart
  9. Bake for 8 minutes until edges are firm
  10. Allow cookies to cool on baking sheets

Makes 2 1/2 dozen cookies

We first went to White Chocolate Grill for Valentine’s Day in 2009. And the story goes something like this….

Veggie Hubby was talking with a client the day before Valentine’s Day and the client ask what our plans were. Veggie Hubby relayed that he had forgotten to get a reservation at restaurant and had tried for the last few days to get one without success, so we would probably just go get a pizza some place. His client thought this was a bad idea and teased Veggie Hubby a lot. When they got off the phone his client proceeded to call restaurants all around the Denver area, even though the client was located in NC. He eventually called White Chocolate and convinced them to take one more reservation for us. He then called Veggie Hubby and let him know what time our reservation was.

We had not heard of White Chocolate before this. In fact the restaurant it 40 miles from our house and located on the other side of Denver from us. We were so touched by the gesture that even though there were snow flurries that night we still headed to the restaurant. When we arrived we were seated promptly and was served one of the best meals we have ever had. To top it off the desserts as you may have guessed by the restaurant name were fabulous. The card included here is a Thank You card I made and sent to Gary’s client. Not only did he find and make a reservation for us, he gave the restaurant his credit card and the meal was totally on him. What a great Valentines memory!

White Chocolate for Vegetarians

Since that meal we have made it a point to go to the restaurant a couple of times a year. Without traffic it takes us a little over an hour to get there, so its not some place we can go to often. We have never been disappointed.

This year since Valentine’s day again fell on a Saturday like back in 2009 we decided to celebrate Valentines Day at White Chocolate again. White Chocolate Grill has several options for Vegetarians, including a quinoa veggie burger and salads. Veggie Hubby does eat Salmon once in a while and White Chocolate makes a wonderful Atlantic Grilled Salmon.  Veggie Hubby loves their homemade fries as well.

This year I had baby back ribs and Veggie Hubby had salmon.  We then shared the White Chocolate Brownie.  White Chocolate was not taking any walk-ins.  They were totally booked up until after 10:00pm. I’m so glad Veggie Hubby called 3 weeks ago to get us a reservation.

Below I shared pictures of what we had this year as well as some photos of some of the other food we have tried.  It was all delicious.

I made this for a Christmas snack and it was delicious. It would be equally as good for Super Bowl! I can’t remember where I found the recipe. I had printed it off and unfortunately the print out didn’t have an identifying website. Veggie Hubby loved it as well, in fact I mixed this popcorn mix in with the other goodies in my cookies boxes and Veggie Hubby picked it all out.

You do need to set aside a time where you will be at home for a little while because it takes an hour in the oven to make this. Its well worth the time 🙂

Pecan Caramel Popcorn Mix

Ingredients

  • 12 cups popped popcorn
  • 3 cups pecan halves
  • 1 cup packed brown sugar
  • 1/2 cup butter
  • 1/3 cup light corn syrup
  • 1/2 teaspoon salt
  • 1/3 teaspoon baking soda

Directions

  1. Heat oven to 200F.
  2. Place popcorn and pecans in large roasting pan (I covered mine in nonstick aluminum foil)
  3. Heat brown sugar, butter, corn syrup and salt in a 2-quart saucepan over medium heat, stirring occasionally until bubbly around edges.
  4. Continue cooking 5 minutes over medium heat without stirring; remove from heat.
  5. Stir in baking soda until foamy
  6. Pour sugar mixture over popcorn, toss until evenly coated.
  7. Bake 1 hour, stirring every 15 minutes.
  8. Spread on a large sheet of wax paper or parchment paper. Cool completely, at least 30 minutes
  9. Store in airtight container.

Glutino Brownies

All but two of the gluten free goodies I made for Christmas were homemade.  The two that were not from scratch, sugar cookies and brownies were both from the brand Glutino.  These mixes were both very easy to make and turned out to be very delicious.

For the brownies I followed the directions and took their suggestion and added chocolate chips.  My favorite chocolate chips are from Chocolove, which I’ve posted on this blog before in other recipes. Veggie Hubby really liked the brownies.  In fact he picked all of them out of the cookie boxes I made but didn’t give away.

For the sugar cookies I also followed the directions. I made half of them plain and the other half I rolled the balls in cinnamon sugar.  Veggie Hubby liked the cinnamon sugar ones the best, so next time I will be making all of the cookies by rolling the balls in cinnamon sugar.

I’ve tried many mixes over the last two years and the two I like the best are Glutino and Lillibee.  I buy both at Whole Foods.  I like the Lillabee brownies, but we liked the Glutino ones better.  Lillabee has a very good mix for muffins!

Chevy’s Fresh Mex for Vegetarians

One of our favorite restaurants is Chevy’s Fresh Mex. Chevy’s menu is made up of Mexican and Tex Mex dishes. Unfortunately there aren’t any located in Colorado, but when we lived in San Diego we ate at Chevy’s 2–3 times a month. Now we only get to eat at one when we travel. We ate at one in Orlando back in November and we actually ate at one in Virginia on Christmas Day when were were driving from North Carolina to Maryland.

Veggie hubby loves the vegetarian fajitas. He does have them leave the mushrooms out as he is not fond of mushrooms. I like both the steak and chicken fajitas, but probably favor the steak ones. We both love the corn tomalita and the black beans and refried beans are very flavorful. Veggie Hubby orders the black beans and I usually order the refried. My favorite thing of all are the fresh tortilla, which they make at the restaurant. Usually they make them right up front where you can watch. Wait I might have misspoke, I really like the chips, they are thin and light and yummy. And the salsa is pretty good too!

Unfortunately all the Chevy’s in southern CA have gone out of business now, so when we travel back to San Diego we can no longer enjoy a meal at Chevy’s.

This is one of my all time favorite cookies since I was a little girl. Veggie hubby likes these too :).

All you really need to do to make the old recipe gluten free is make sure you have gluten free vanilla and oatmeal. All of the other ingredients are naturally gluten free. This recipe is very easy and takes no more than 15 minutes from start to finish.

I used Bob’s Red Mill Gluten Free Old Fashion Rolled Oats that I got from Whole Foods. I also got the vanilla from Whole Foods as well but do not remember the brand. I used a natural peanut butter as well.

Gluten Free Chocolate No Bake Oatmeal Cookies

Ingredients

  • 2 cups sugar
  • 3 tbls cocoa
  • 1 stick butter
  • 1/2 cup milk
  • 1 tsp vanilla
  • 1/2 cup peanut butter
  • 3 cups gluten free oatmeal

Directions

  1. Mix sugar, cocoa, butter and milk together in saucepan.
  2. Boil 40 seconds
  3. Remove from heat
  4. Stir in vanilla, peanut butter and oatmeal
  5. Drop by tablespoon onto wax paper and let cool

These Gluten Free Chocolate Macaroons are very yummy. As I stated in last week’s blog I lost the recipe for chocolate macaroons that I made last year, because the link is broken this year, so I searched online and found a new recipe. Here is the link and I will also put the recipe here with my modifications, so we won’t lose it for next year.

Ingredients:

  • 1 1/3 cups semisweet chocolate chips (about 8 ounces), divided
  • 2 large egg whites
  • 1/4 teaspoon salt
  • 1/2 cup sugar
  • 1/2 teaspoon vanilla extract
  • 1 1/2 cups unsweetened flaked coconut

Directions:

  1. Preheat oven to 325 F.
  2. Line 2 large rimmed baking sheets with parchment paper.
  3. place 1 cup of chocolate chips in microwave-safe bowl.  Microwave on low setting at 10-second intervals until chocolate is melted. Stirring occasionally.
  4. Using mixer, beat egg whites and salt in medium bowl until soft peaks form.
  5. Gradually ad sugar, then vanilla.
  6. Fold in melted chocolate and coconut, then remaining 1/3 cup of chocolate chips
  7. Drop heaping teaspoons onto prepared baking sheets, spacing 1 1/2 inches apart.
  8. Bake cookies 10 minutes. Reverse baking sheets and bake for 1 more minutes.
  9. Cool on baking sheets or on racks.
  10. Store airtight at room temperature.

My changes are I used Chocolove full size chocolate chips because I like them and its what I had. I also used unsweetened coconut.  These turned out plenty sweet without using sweetened shredded coconut. I also used cane sugar instead of refined white sugar.

I especially love these because the chocolate chips added at the end add a nice chocolate surprise when you bite into them.
