Veggie Hubby really enjoys going to Qdoba Mexican Grill. His favorite meal is the burrito veggie bowl with brown rice, black beans and the green salsa (which I believe is the medium heat). He loves to get the fajita vegetables and guacamole added to it. For vegetarians there are many options from burritos, tacos, nachos and quesadillas. You can certainly go vegan as well by leaving off all the dairy.
For me I usually get the pick two and get crunchy tacos with ground beef and then either a steak quesadilla or a steak bowl. I’ve included several pictures here so you can see how the bowls look at different visits.
We also participate in their award program, called Qdoba Rewards. The basics is for every 10 meal items you buy you get one free. So on the 6th visit we get one of our meals free. Each visit we get 2 meals times 5 equals ten. They also send some pretty good coupons for chips and salsa and such every so often.

We first went to White Chocolate Grill for Valentine’s Day in 2009. And the story goes something like this….
Veggie Hubby was talking with a client the day before Valentine’s Day and the client ask what our plans were. Veggie Hubby relayed that he had forgotten to get a reservation at restaurant and had tried for the last few days to get one without success, so we would probably just go get a pizza some place. His client thought this was a bad idea and teased Veggie Hubby a lot. When they got off the phone his client proceeded to call restaurants all around the Denver area, even though the client was located in NC. He eventually called White Chocolate and convinced them to take one more reservation for us. He then called Veggie Hubby and let him know what time our reservation was.
We had not heard of White Chocolate before this. In fact the restaurant it 40 miles from our house and located on the other side of Denver from us. We were so touched by the gesture that even though there were snow flurries that night we still headed to the restaurant. When we arrived we were seated promptly and was served one of the best meals we have ever had. To top it off the desserts as you may have guessed by the restaurant name were fabulous. The card included here is a Thank You card I made and sent to Gary’s client. Not only did he find and make a reservation for us, he gave the restaurant his credit card and the meal was totally on him. What a great Valentines memory!
Since that meal we have made it a point to go to the restaurant a couple of times a year. Without traffic it takes us a little over an hour to get there, so its not some place we can go to often. We have never been disappointed.
This year since Valentine’s day again fell on a Saturday like back in 2009 we decided to celebrate Valentines Day at White Chocolate again. White Chocolate Grill has several options for Vegetarians, including a quinoa veggie burger and salads. Veggie Hubby does eat Salmon once in a while and White Chocolate makes a wonderful Atlantic Grilled Salmon. Veggie Hubby loves their homemade fries as well.
This year I had baby back ribs and Veggie Hubby had salmon. We then shared the White Chocolate Brownie. White Chocolate was not taking any walk-ins. They were totally booked up until after 10:00pm. I’m so glad Veggie Hubby called 3 weeks ago to get us a reservation.

Chevy’s Vegetarian Fajita
Chevy’s Fresh Mex for Vegetarians
One of our favorite restaurants is Chevy’s Fresh Mex. Chevy’s menu is made up of Mexican and Tex Mex dishes. Unfortunately there aren’t any located in Colorado, but when we lived in San Diego we ate at Chevy’s 2–3 times a month. Now we only get to eat at one when we travel. We ate at one in Orlando back in November and we actually ate at one in Virginia on Christmas Day when were were driving from North Carolina to Maryland.
Veggie hubby loves the vegetarian fajitas. He does have them leave the mushrooms out as he is not fond of mushrooms. I like both the steak and chicken fajitas, but probably favor the steak ones. We both love the corn tomalita and the black beans and refried beans are very flavorful. Veggie Hubby orders the black beans and I usually order the refried. My favorite thing of all are the fresh tortilla, which they make at the restaurant. Usually they make them right up front where you can watch. Wait I might have misspoke, I really like the chips, they are thin and light and yummy. And the salsa is pretty good too!

Unfortunately all the Chevy’s in southern CA have gone out of business now, so when we travel back to San Diego we can no longer enjoy a meal at Chevy’s.

Gluten Free Thanksgiving Stuffing – after cooked
Veggie Hubby loves stuffing at Thanksgiving. He even let me use chicken broth. You could definitely make this with vegetable broth as well. This recipe was very easy and very yummy. It actually got better as left overs. The flavors were even more enhanced when reheated.
I found this recipe on allrecipes.com. You may notice that my onions are large pieces. I don’t really like onions so I left them large in size so I could pick them out 🙂 I also added green pepper. I had the tops from the stuffed green peppers I made so I thought they would be good in the stuffing and they were.
The other change I made is I found gluten free bread cubes at Whole Foods so I used them instead of making them myself.
Here is the recipe copied from here with my changes. I divided the recipe in 1/2.
Gluten Free Thanksgiving Stuffing – before cooked
- 1 package of gluten free bread cubes from whole foods
- 2 teaspoons olive oil
- 1/2 onion, diced
- 1 stalk celery, diced
- 1/2 cup green peppers
- 1/2 teaspoon chopped fresh sage
- 1/2 teaspoon dried thyme leaves
- 1/2 teaspoon salt
- ground black pepper to taste
- 1 cup gluten-free chicken broth
- 1 large eggs
- Preheat oven to 325 degrees F (165 degrees C). Grease a 3-quart baking dish.
- Cut bread into cubes about 3/4-inch square and spread onto a baking sheet.
- Bake in the preheated oven until crisp, 12 to 17 minutes.
- Heat olive oil in a large skillet over medium heat. Cook and stir onions and celery in the hot oil until soft, 8 to 10 minutes.
- Stir sage, thyme, salt, and black pepper into the vegetables.
- Mix toasted bread crumbs, chicken broth, and eggs into vegetables.
- Spoon dressing into the prepared baking dish and cover dish.
- Bake in the preheated oven for 30 minutes, uncover, and bake until top of dressing is crisp and lightly browned, about 10 more minutes.
For Vegetarian option, substitute vegetable broth for chicken broth.
For Vegan option, also substitute eggs with egg replacer.

Almost Gluten Free Thanksgiving Table
Veggie Hubby and I celebrated Thanksgiving with just the two of us. It has been a very hectic fall and I’m really sorry that I haven’t been able to blog lately. We decided this year to have a nice quiet day at home. I love to cook, so I spent the afternoon before and morning of Thanksgiving day cooking some of our favorites. All but 2 items are totally Gluten Free. Those two items are the Apple Pie and the Scalloped Potatoes. In hind sight, I could have used corn starch instead of flour as the thickener in the Scalloped Potatoes and they would have been Gluten Free as well. I will share the recipe for the potatoes in a later post, as they were awesome!

Honey Baked Ham
You can actually order a Mini Honey Baked Ham and they start at between 3-4 pounds in size. The one pictured is 4 1/2 pounds. I freeze the left over in individual packs for later consumption.

Vegetable Dumplings – pan fried
Almost exactly 4 years ago I wrote a post about on PF Chang’s being great for vegetarians. Click here to see it. This is still true. There are many options and they are really great if you get something you don’t like to replace it with another dish.
We love the vegetable spring rolls and vegetarian dumplings. The picture only had one because Veggie Hubby ate the other one before I could get a picture! :)) Veggie Hubby likes the spicy green beans and the Stir-Fried Eggplant dish as well. Usually Veggie Hubby gets there Buddha’s Feast which is stir fried veggies.
I have to say that their wonton soup is really yummy. The last time I went I got chicken lo mein and it was great too!
The service was also fabulous. Our waiter was new, but he was so friendly and helpful.

Briggs Street Cafe located downstairs
Veggie Hubby found this local place, Briggs Street Cafe when he met a potential client for coffee. The owner told him they served Gluten Free Pizza at lunch, so Hubby came home and got me and we went back for lunch. They have amazing Gluten Free Pizza. As you can tell from the picture below Veggie Hubby had the no cheese with red peppers half and I had the side with cheese and ham. Yummy!
I have not been able to find a website for Briggs Street Cafe but they have a Facebook page and very good ratings on Yelp.
This Cafe is ran by a Persian couple. They are very nice and very friendly. We enjoyed our meal and will definitely go back again for lunch. This restaurant is only open for Breakfast and Lunch. From the reviews it looks like the breakfast and pastries are highly recommended. We need to go back and try these for sure! Also they had decorated with very interesting art work.
The Briggs Street Cafe is off the beaten path and is located downstairs in the building pictured.
