Gluten Free Chocolate Sugar Cookies

If you like Sugar Cookies and you like Chocolate, you will love these. I made these cookies over the holidays ant they turned out yummy. You can find the recipe here. These cookies were one of the favorites this year. They also traveled very well. Veggie hubby liked these. In fact there weren’t any cookies that Veggie Hubby didn’t like.

Gluten Free Chocolate Sugar Cookies

Ingredients

  • 1/2 cup vegetable shortening – Melted and cooled
  • 1 1/2 cup gluten free all-purpose flour
  • 1/2 cup dutch processed cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp kosher salt
  • 1 1/2 cup sugar
  • 1 stick butter – room temperature
  • 1 large egg
  • 1 1/2 tsp vanilla

Directions

  1. Preheat oven to 375F
  2. Melt the shortening and set aside to cool
  3. Combine flour, cocoa powder, baking powder and salt in medium bowl
  4. In mixing bowl, beat butter and sugar for 3 minutes on med-high speed
  5. Add in shortening, egg and vanilla, mixing after each.
  6. On low speed, slowly add flour mixture
  7. Place dough still in mixing bowl in refrigerator for 15 minutes
  8. Drop tablespoon size cookies on parchment lined baking sheets 2 inches apart
  9. Bake for 8 minutes until edges are firm
  10. Allow cookies to cool on baking sheets

Makes 2 1/2 dozen cookies

Pecan Caramel Popcorn Mix

I made this for a Christmas snack and it was delicious. It would be equally as good for Super Bowl! I can’t remember where I found the recipe. I had printed it off and unfortunately the print out didn’t have an identifying website. Veggie Hubby loved it as well, in fact I mixed this popcorn mix in with the other goodies in my cookies boxes and Veggie Hubby picked it all out.

You do need to set aside a time where you will be at home for a little while because it takes an hour in the oven to make this. Its well worth the time 🙂

Pecan Caramel Popcorn Mix

Ingredients

  • 12 cups popped popcorn
  • 3 cups pecan halves
  • 1 cup packed brown sugar
  • 1/2 cup butter
  • 1/3 cup light corn syrup
  • 1/2 teaspoon salt
  • 1/3 teaspoon baking soda

Directions

  1. Heat oven to 200F.
  2. Place popcorn and pecans in large roasting pan (I covered mine in nonstick aluminum foil)
  3. Heat brown sugar, butter, corn syrup and salt in a 2-quart saucepan over medium heat, stirring occasionally until bubbly around edges.
  4. Continue cooking 5 minutes over medium heat without stirring; remove from heat.
  5. Stir in baking soda until foamy
  6. Pour sugar mixture over popcorn, toss until evenly coated.
  7. Bake 1 hour, stirring every 15 minutes.
  8. Spread on a large sheet of wax paper or parchment paper. Cool completely, at least 30 minutes
  9. Store in airtight container.

With the Super Bowl next Sunday, you are probably asking yourself the question “What food should I make for my Super Bowl Party?”  And if you have people coming over you probably have some that are vegetarian or gluten free or just plain picky (I fall in that category :)).  So I thought I would create a list of the recipes I have already shared on my blog that may come in handy for the big game.

First off no Super Bowl is complete without some really good chili, especially if you are in a cold climate like we are.  So here are my recipes for chili.  One is vegetarian and one is full of beef. Both are delicious and easy to make and of course gluten free. Make the day before and the flavor will be awesome!

Of course you need some finger food heres some good choices to make everyone happy.  And for the salad if you put in fake bacon the meat eaters won’t even know.

And finally you need some sweets stuff to go with the chips.  Here’s some of my favorites.  No big surprise that most of them have chocolate as an ingredient!

This is one of my all time favorite cookies since I was a little girl. Veggie hubby likes these too :).

All you really need to do to make the old recipe gluten free is make sure you have gluten free vanilla and oatmeal. All of the other ingredients are naturally gluten free. This recipe is very easy and takes no more than 15 minutes from start to finish.

I used Bob’s Red Mill Gluten Free Old Fashion Rolled Oats that I got from Whole Foods. I also got the vanilla from Whole Foods as well but do not remember the brand. I used a natural peanut butter as well.

Ingredients

  • 2 cups sugar
  • 3 tbls cocoa
  • 1 stick butter
  • 1/2 cup milk
  • 1 tsp vanilla
  • 1/2 cup peanut butter
  • 3 cups gluten free oatmeal

Directions

  1. Mix sugar, cocoa, butter and milk together in saucepan.
  2. Boil 40 seconds
  3. Remove from heat
  4. Stir in vanilla, peanut butter and oatmeal
  5. Drop by tablespoon onto wax paper and let cool

These Gluten Free Chocolate Macaroons are very yummy. As I stated in last week’s blog I lost the recipe for chocolate macaroons that I made last year, because the link is broken this year, so I searched online and found a new recipe. Here is the link and I will also put the recipe here with my modifications, so we won’t lose it for next year.

Ingredients:

  • 1 1/3 cups semisweet chocolate chips (about 8 ounces), divided
  • 2 large egg whites
  • 1/4 teaspoon salt
  • 1/2 cup sugar
  • 1/2 teaspoon vanilla extract
  • 1 1/2 cups unsweetened flaked coconut

Directions:

  1. Preheat oven to 325 F.
  2. Line 2 large rimmed baking sheets with parchment paper.
  3. place 1 cup of chocolate chips in microwave-safe bowl.  Microwave on low setting at 10-second intervals until chocolate is melted. Stirring occasionally.
  4. Using mixer, beat egg whites and salt in medium bowl until soft peaks form.
  5. Gradually ad sugar, then vanilla.
  6. Fold in melted chocolate and coconut, then remaining 1/3 cup of chocolate chips
  7. Drop heaping teaspoons onto prepared baking sheets, spacing 1 1/2 inches apart.
  8. Bake cookies 10 minutes. Reverse baking sheets and bake for 1 more minutes.
  9. Cool on baking sheets or on racks.
  10. Store airtight at room temperature.

My changes are I used Chocolove full size chocolate chips because I like them and its what I had. I also used unsweetened coconut.  These turned out plenty sweet without using sweetened shredded coconut. I also used cane sugar instead of refined white sugar.

I especially love these because the chocolate chips added at the end add a nice chocolate surprise when you bite into them.

Yesterday was one of my favorite days of the year, Cookie Day! I love to bake and there are so many really good Gluten Free recipes. I spent the day baking all kinds of fun treats. In the picture you can see from top to bottom, left to right – Girl Scout Samoa’s, brownies, Chocolate macaroons, peanut butter chocolate chip cookies, homemade almond joys, chocolate sugar cookies, sugar cookies (some with cinnamon sugar), ginger shortbread cookies, chocolate oatmeal no bake cookies, mounds cookies.

Some of these cookies I made last year and if you click on the link you can see the recipes from the blog posts from last year.  I will post the other recipes in upcoming blog posts.

I also made caramelized pecans and a new recipe for me for Pecan Carmel Pop Corn Mix.  So far everything has been yummy.  Still mine and Veggie Hubby’s favorite are the homemade almond joys. This year I did make them smaller than last year and ended up with 25 total.

Some of the recipes use no refined sugar and I actually used cane sugar for those that called for refined white sugar.

Veggie Hubby loves stuffing at Thanksgiving. He even let me use chicken broth. You could definitely make this with vegetable broth as well. This recipe was very easy and very yummy. It actually got better as left overs. The flavors were even more enhanced when reheated.

I found this recipe on allrecipes.com.  You may notice that my onions are large pieces.  I don’t really like onions so I left them large in size so I could pick them out 🙂  I also added green pepper.  I had the tops from the stuffed green peppers I made so I thought they would be good in the stuffing and they were.

The other change I made is I found gluten free bread cubes at Whole Foods so I used them instead of making them myself.

Ingredients 

  • 1 package of gluten free bread cubes from whole foods
  • 2 teaspoons olive oil
  • 1/2 onion, diced
  • 1 stalk celery, diced
  • 1/2 cup green peppers
  • 1/2 teaspoon chopped fresh sage
  • 1/2 teaspoon dried thyme leaves 
  • 1/2 teaspoon salt
  • ground black pepper to taste
  • 1 cup gluten-free chicken broth
  • 1 large eggs

Directions

  1. Preheat oven to 325 degrees F (165 degrees C). Grease a 3-quart baking dish.
  2. Cut bread into cubes about 3/4-inch square and spread onto a baking sheet.
  3. Bake in the preheated oven until crisp, 12 to 17 minutes.
  4. Heat olive oil in a large skillet over medium heat. Cook and stir onions and celery in the hot oil until soft, 8 to 10 minutes.
  5. Stir sage, thyme, salt, and black pepper into the vegetables.
  6. Mix toasted bread crumbs, chicken broth, and eggs into vegetables.
  7. Spoon dressing into the prepared baking dish and cover dish.
  8. Bake in the preheated oven for 30 minutes, uncover, and bake until top of dressing is crisp and lightly browned, about 10 more minutes.

For Vegetarian option, substitute vegetable broth for chicken broth.

For Vegan option, also substitute eggs with egg replacer.
