I’m so sorry for the break in posts. Veggie Hubby and I have been preparing for a rim to rim to rim Grand Canyon 2 day 46 mile hike later this year. I’ve finally caught my breath and thought I would share some of our favorite snacks that we have found while we have been training.
Our newest favorite bar is the Quest Bar. The doctor who helped us with our health plan last year recently recommend this bar. It is low in sugar and contains no artificial sweeteners. It is also gluten-free and high in protein. These bars come in a ton of different flavors. We order the 12-pack variety Quest Bars from Amazon and have tried 8 of them and have like all the flavors.
If you are a chocolate lover like me then you may want to start with the 12-pack variety Chocolate Lovers Quest Bars. Veggie Hubby isn’t as big of a chocolate person as I am, so we opted for the Variety pack with some flavors other than chocolate.
If you have tried these or do based on this blog posting, please list your favorite flavor in the comments. There are so many flavors its hard to know which to try next.
Also if you have another snack item that you like that is healthy and could be taken on a 20+ mile hike, please least as well. We are still looking for items to take with us!
Over the holidays we traveled from CO to the east coast. Back in October one of my friends in Virginia told me about a Vegan restaurant that she discovered in her neighborhood. I ask her if it would be on our route when we visited the east coast. She sent me directions and it was only about a mile off the highway on our direct route, so of course we stopped and tried it out.
Loving Hut – Falls Church, VA
The name of the restaurant is Loving Hut. As it turns out this is a franchise with restaurants all over the world. Here is a list of the restaurants in the US – list. The one we visited was located in Falls Church, VA. As we flew during our lunch time from Colorado to Maryland we were starved by the time we arrived at little after 5:00pm.
We found the menu interesting and took a little time to place our order. Everything on the menu is totally Vegan (i.e. no animal products). Gary ordered Vegan Shrimp. I ordered Fried Wontons and we shared an order of Golden Rolls. We really enjoyed all three.

We topped off our meal with a desert, chocolate banana cake. It was delicious. I forgot to take a picture, but I copied one off of their website. We would highly recommend the cake and all the other dishes we had.
The staff was very friendly and had no issues answering our questions. So if you are ever near a Loving Hut restaurant, try it out!

While in San Diego last weekend, we looked for other restaurants that would help us stay on our plan. We know Chinese Food is one of the best because most Chinese restaurants make dishes one at a time and can easily leave out ingredients. Plus they almost always use fresh food! I searched online and found Del Mar Rendezvous. It had great reviews!

I made a reservation using opentable.com. Unfortunately our class ran over and we didn’t make our reservation. The nice folks at Del Mar Rendezvous called us to see if we were coming and I asked them if it would be ok if we got there in 15 minutes and they said sure we will hold your table. And they did!
When we entered the restaurant they asked us if we had any dietary issues and after we answered “yes” they gave us a Vegetarian / Vegan Menu for Veggie Hubby and a Gluten-Free Menu along with the full menu. The waiter was very knowledgeable about the ingredients of each dish and worked with us to find something we could eat. The service was quick and the food was yummy! I forgot to take pictures until I was finished but here is a picture of what was left of Veggie Hubby’s Buddha’s Treasure when I remembered to take a picture! I had Shrimp Fried Rice (Gluten-Free)
Last weekend we had the opportunity to visit San Diego for a training. Veggie Hubby and I lived in San Diego for 5 years before we moved to CO. One of our favorite restaurants is Sipz Vegetarian Cafe which serves Asian Fuzion food. The menu is marked with Gluten Free and Vegan options as well!

No meat is served here only fake meat like chicken, shrimp, etc… made with tofu. The food is wonderful, even this meat loving wife loves it!.

We finished the meal with Veggie Hubby’s favorite cake Vegan Chocolate Cake. (he doesn’t like cake very much, but always orders this one).
We stopped here on our way from the airport to the hotel. What a way to start our San Diego visit!
Archdale Soda Shop
Back in July Veggie Hubby and I had the chance to visit Maryland and some of his favorite college food places! Since then I had a chance to go back to my home town, Trinity, NC and visit one of my favorite places…Archdale Soda Shop! When I was a kid the Soda Shop special was 2 hot dogs, fries and a drink for $1 (note the drink for me is Pepsi, but you can get the famous southern sweet tea as well). In High School I believe it was $1.50-$1.75.

At the Archdale Soda shop they will come to your car and take your order and then bring your food to the car (curb service as it is called). Since it was Summer in NC when my Mom and I decided to go, we wend inside and ate in the Air Conditioning! Of course I ordered the special which is now a bit more at $3.85. The food was the same as I remember. Yummy! I love crinkle cut fries! I actually am not a big fan of hot dogs but for some reason I really do like the hot dogs at the Soda Shop. I like Ketchup and Chili on mine and my Mom likes hot dogs all the way with slaw and onions and other stuff! Now this is not a place where Veggie Hubby would be happy. There isn’t too much offered for the vegetarian!

3 weeks ago Veggie Hubby broke his collar bone chasing the kids in the neighborhood. It is a game Hubby and the kids have played all summer, but on this Saturday night hubby lost his balance and hit the street with his shoulder. It was not pretty. After a quick trip to Urgent Care and an x-ray it was confirmed that the collar bone was broken. Hubby got a nice blue sling and some pain meds. The next week a neighbor ask if we wanted to go hiking. We love taking hiking trips with them. Veggie Hubby decided he would be ok and we should go. We got out his back pack and he tried it with one shoulder strap and the strap around the waist and decided it was a go.
So on August 21 we headed to Moffet Tunnel in CO and the 4 mile hike to Heart Lake. This is located at the Continental Divide. We had a great time and the only problems Veggie Hubby had was when we crossed water and he lost his balance a couple of times. We were pretty exhausted when we got home, but I think you can see from the photos that it was well worth the trip!
Our favorite snack to take hiking is Kind bars. We found these a few months ago at Sunflower and Whole Foods. These are really yummy and good for you according to Veggie Hubby! My favorite is the Almond and Coconut. It tastes like an Almond Joy without the chocolate. My second favorite is Nut Delight. Veggie Hubby likes the Mango Macadamia. His second favorite is Strawberry Nut Delight.
I would not recommend to do this with a broken collar bone, but its not like I can convince Veggie hubby otherwise 🙂

Heart Lake – the water is crystal clear.
Last weekend we (Veggie Hubby and Me) headed to the east coast. We surprised my Mom for her 70th Birthday, then headed up to DC/MD to see Veggie Hubby’s Mom. I would not suggest making this drive from NC to MD and back on the July 4th weekend. Traffic was a bear. On the way back to NC we were in bumper to bumper traffic from Daly City through Richmond. We avoided Springfield by taking a back way from Frederick.
We did have some fun eating at Veggie Hubby’s favorite restaurants from College (University of MD). The first evening we ate at Ledo’s Pizza in Frederick. Ledo’s is a chain in the MD/VA area. Veggie Hubby doesn’t eat cheese but still likes their pizza. He also likes the salad and I have to say that the bread sticks are pretty good as well. I think what makes it really good is the sauce. When we use to live in NC we would buy the sauce and pre-made uncooked pizza’s and take them back with us to NC.

We also had the opportunity to eat at a Jerry’s Subs in VA when we took a break from the traffic. Jerry’s is another chain restaurant in the MD/VA area. I like the Philly Cheese steaks and Veggie Hubby likes of course their veggie sub minus the cheese and mushrooms. They have really good fries which are more like potato wedges. We enjoyed our food and then headed back out to I-95 to sit in traffic for the next 5 hours or so!

Our flights back on the 4th were absolutely crazy. We got to the Raleigh airport and our first flight to Houston was delayed and we wouldn’t make our connection to Denver, so Continental put us on US Air through Philly with a 5 hour layover. Our flight from Philly to Denver was delayed getting into Philly because of thunderstorms in Florida. So we left Philly 2 1/2 hours late. Of course when we got to Denver, Denver had thunderstorms so we were in a holding pattern probably somewhere over Wyoming for an hour. We finally landed at 11:00pm and had to trudge to the shuttle lot in the down pouring rain. Fortunately we were off on Monday so getting home at mid-night was not so bad. Sitting in the Philly airport for hours was offset by being able to eat a nice lunch at Legal Seafood. Legal Seafood is one of my favorite chain restaurants in the Northeast. This was Veggie Hubby’s first time and he wasn’t so impressed. He ordered the Vegetarian Box which is suppose to have Asian flavored stir-fried vegetables, Thai red curry coconut sauce, cashews, tofu and brown rice. The sauce was very good, but Hubby was disappointed because there weren’t hardly any veggies, mostly rice and tofu. My crab cake sandwich was wonderful! Oh well, guess Vegetarian Wife and Veggie Hubby can’t always like the same restaurants!
